This was on a rock located in the intertidal zone at Flatrock beach. I wonder if it might be Maritime Sunburst Lichen (Xanthoria parietina). Any thoughts?

Your identification is correct. Another colloquial name for the species is the Gull Sh*t Lichen, because it grows on nitrogen-enriched surfaces including roofs of building in coastal areas.
